Much scientific evidence suggests that processed meat can cause diseases such as rectal cancer, type 2 diabetes, cardiovascular diseases.

According to Vijaya Surampudi, an assistant professor at the UCLA Center for Human Nutrition, processed meat causes disease by containing substances that promote inflammation in the body, altering the intestinal microflora.

“The gut bacteria interact with the immune system, eventually leading to prolonged inflammation, which can affect blood pressure, blood sugar and cholesterol, increasing the risk of chronic diseases, even death,” professor Surampudi said.

He said a food-based diet helps prevent it better and reduces the risk of disease.

“This doesn’t mean you have to be vegan or vegan. It’s just that you should switch to a diet rich in vegetables,” he said.

Currently, on the market there are several types of processed meat labeled “no nitrates or nitrites (no preservatives)”.

They use ingredients from celery juice, a natural nitrate, but it is unclear whether it is better than synthetic nitrates or nitrites.

According to Professor Frank Hu, a dietitian at the Harvard T.H. Chan School of Public Health, health experts generally agree that processed meat is more harmful than fresh meat.

Processed meats include ham, sausages, bacon, cold cuts, even broths made from such types of products.

When processed, the meat is transformed through processing, fermentation, smoking or salting to enhance its flavor and shelf life.
